Family Tradition and History
Sam Pike was born in Duplin County, North Carolina in 1921.Duplin County is located in the Eastern parts of North Carolina. Sam was one of thirteen children and was raised in a community of mostly farmers. As a young man he served in the US Army as a cook during WWII. He then returned back to the Eastern part of North Carolina and became a farmer.
The Family Recipe Is Perfected
Sam learned to barbeque pork over a pit in the ground using hot oak or hickory coals. This process would usually take from twelve to fourteen hours to fully cook the pig. During this time a sauce was constantly applied to the pig while it was cooking. His pork barbeque was constantly in demand and became a favorite entree for family gatherings and social events throughout his community.
Over the years Sam began to experiment with different ingredients for his sauces. After many years of adding too and taking away he arrived at what he referred to as the "family recipe", which he never shared with any other person outside the family. His barbeque and sauces were in constant demand and through the years was perfected. He passed this art, and it truly is an art, down to his children and to his grandsons. Few of them have preserved this art, but his grandson Shawn, has continued this family specialty and the tradition that has been appreciated now for "Three" generations. His grandfather would be proud today to be able to sit down to a plate of true "Eastern North Carolina Barbeque".
